Ingredients
  

  • Chicken Wings
  • Alexanders Great Seasonings Lemon Pepper
  • Alexanders Great Seasonings Two Thumbs-Up Rub
  • Olive oil or vegetable oil optional
  • Oak wood, Pecan wood or wood chips (such as hickory, apple, or cherry) for smoking
  • Aluminum foil

Instructions
 

Preparation

  • Rinse the chicken wings under cold water and pat them dry with paper towels. Place the wings in a large bowl and drizzle them with olive oil or vegetable oil. Toss to coat them evenly.

Seasoning

  • Lightly season the chicken wings with Alexander's Great Seasonings' Lemon Pepper.
    •Next, apply a layer of Alexander's Great Seasonings' Two-Thumbs-Up Rub on the wings, pressing the rub into the skin for better flavor penetration. Make sure both sides of the wings are evenly coated with Alexander’s Great Seasonings’ Lemon Pepper and Two-Thumbs-Up-Rub.
    •Let the seasoned wings sit for about 20-30 minutes to allow the flavors to meld.

Prep the Smoker

  • If you're using a charcoal smoker, light the charcoal and let it burn until it's covered with white ash. If you're using wood, electric or gas smoker, preheat it according to the manufacturer's instructions.
    •If using an offset wood smoker, burn the wood to create coals of fire with smoke that is mostly light blue and the temperature reaches 250°F. If using wood chips, soak them in water for about 30 minutes, then drain them. Place the soaked wood chips in a smoker box or wrap them in aluminum foil, poking a few holes to allow smoke to escape.

Smoking

  • •Maintain a steady smoking temperature of around 225-250°F (107-121°C).
    •If your smoker has multiple racks, arrange the seasoned chicken wings on the racks, leaving some space between them for proper air circulation.
    •Place the wood chip packet or smoker box over the heat source to start producing smoke.
    •Put the chicken wings in either smoker and close the lid. Make sure the smoke vents are partially open to maintain airflow.

Cooking

  • Smoke the chicken wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C). Use a meat thermometer to accurately gauge the temperature. I like my wings to reach a temperature of 180°F. (82°C).

Finishing Touches

  • Once the wings are fully cooked, they should have a beautiful golden-brown color and a smoky aroma.
    You can choose to serve the wings as-is, or for an extra layer of flavor, you can lightly brush them with a mixture of melted butter and more of Alexander's Great Seasonings' Lemon Pepper and Two-Thumbs-Up Rub.
    Be careful so as not to over season your wings. These seasonings are potent.
  • Serve and Enjoy:
    Arrange the smoked chicken wings on a serving platter and garnish with some fresh chopped herbs or a squeeze of lemon juice if desired.
    Serve the wings with Alexander’s Great Seasoning’s Two-Thumbs-Up BBQ Sauce or your favorite dipping sauces, such as ranch or blue cheese.
