Sweet Maple Smoked Salmon

Ingredients
  

  • 1 lb Salmon fillet
  • 1/4 cup maple syrup
  • 1 tsp dijon mustard
  • 3 tbsp soy sauce
  • 2 cloves garlic crushed
  • Alexanders Great Seasonings Lemon Pepper Seasoning
  • Alexanders Great Seasonings Two-Thumbs Up Rub
  • Cooking spray or oil (for greasing the rack)

Instructions
 

  • Preheat your offset smoker to 225°F (107°C).
  • In a small saucepan, combine the maple syrup, Dijon mustard, soy sauce, and crushed garlic. Heat the mixture over medium heat, stirring occasionally, until it comes to a gentle boil. Reduce the heat and let it simmer for about 5 minutes, allowing the flavors to meld. Remove from heat and set aside.
  • Season the salmon fillet generously with Alex’s Lemon pepper and Two-Thumbs-Up rub seasoning lightly on both sides.
  • Grease a smoking rack or pan with cooking spray or oil and place the seasoned salmon fillet on it.
  • Pour some of the prepared sauce over the salmon, making sure to coat it evenly.
  • Insert a meat thermometer into the center of the salmon fillet.
  • Place the rack or pan with the salmon in the preheated smoker and bake for 25 minutes. Salmon can take from 30 minutes to an hour to reach the recommended temperature.
  • After 25 minutes brush another coat of the sauce over the top.
  • Continue smoking the salmon until the internal temperature reaches 135°F (57°C), which should take another few minutes depending on the thickness of the fillet.
  • Once the salmon is cooked through, remove it from the smoker and let it rest for a couple of minutes.
  • Serve the smoked salmon fillet hot, drizzled with any remaining sauce as desired.
