Uncle Willie's Baked Lemon Pepper Chicken
Ingredients
- 4 each leg quarters separated into legs and thighs
- Alexander's Great Seasoning Lemon Pepper Seasoning
- olive oil spray
Instructions
- Preheat your oven to 400°F (200°C). Line a baking pan with parchment paper to prevent sticking.
- Season the chicken generously with Alex’s Lemon Pepper seasoning with the skin side facing down. Let it marinate for about 15 minutes at room temperature.
- Once marinated, place the chicken in the preheated oven and bake for approximately 25 minutes or until the internal temperature reaches 145°F (63°C).
- Remove the chicken from the oven and drain any excess drippings from the pan. Flip the chicken pieces over so the skin side is facing up.
- Apply another generous coating of Alex’s Lemon Pepper seasoning on the skin side of the chicken.
- Return the chicken to the oven and continue baking until it reaches an internal temperature of 165°F (74°C) at the thickest part of the meat. If you prefer a slightly more well-done chicken, aim for 180°F (82°C).
- Once the chicken reaches the desired temperature, remove it from the oven and let it rest for about 10 minutes before serving.
